The PunchIn Loops workspace might - despite its limitations - be more suitable for this stuff, see http://www.sensomusic.com/forums/viewtopic.php?id=327. It's a lot more complex as a whole, but control of the recordings is "centralized" into a master patch with a script, so that the sample playing patches are a lot simpler.
Right now I can't really think of any other good ways of creating overdubs with a fixed number of bars, at least nothing that's flexible in terms of where in the bar the recording/playback will be triggered etc. Have you checked out the Live Echoplexx patch? I guess what you're after would be some kind of a mix of the PunchIn and the Echoplexx patches.

I've never really tried the "other" recording options in the samplers much, but I see if I can find some solution tonight.
[Edit:] How do you want the overdubs to behave in terms of length (in bars)? Should the first recording's length be kept, or should it updated everytime a new recording takes place?
