The wiki explains how to start the program with audio engine on:

On first sight I could not find this feature in the current Usine version (for Mac). So either
* the manual is already ahead of the program (is this already a Hollyhock 2 feature?)
* the manual is outdated and the feature was removed (that would be pretty unfortunate and my number one feature request would be to bring it back :) )
* the feature is not available for the Mac version (then we should clarify that in the wiki in the mean time - and please add the feature to the Mac version, too!)

Background: Am using a headless Mac Mini as a sound module and would like to use Usine as plugin host - all the flexibility is wonderful. But having to attach remotely to the "sound module" just to turn on the audio engine is not very elegant.

Yes , the wiki is for Usine Hollyhock II

I've added some modifications to this page, you're right, was maybe not clear enough.
it's the workspace wiki page, not global settings, this mean you can set these options for each workspace.
so when you run this workspace , audio engine turn ON .
and this available for Mac also of course.

not sure to understand your question about plug ins. when you drag a plug in , the audio out modules are automatically created ?
