Hello and apologies if this is a very basic question... I have recently bought HH2 and haven't had chance to try it out much yet.
I was wondering if there was a was to easily record 4 inputs at once into a sampler or looper or something (i want to record myself playing drums using 4 mics)?

Using a sampler module with 4 inputs maybe : )
It asks you the required number of inputs when you put it in a patch.
As long as you have 4 or more input sound card that would be no problem.

A few different ways to set this up.
Perhaps the very easiest is to use one rack per input, and then put all four racks into the "Bounce to disk". Hit record and lay out your beat!
But if you want it directly into a sampler or looper, you can set up a polyphonic sampler. Set it to four voices and then you will also be good to go.
And then there are the loopers, which I imagine can also do this very well.

is there a way to say have each drum mic on its own channel, then run these 4 channels into one sampler/looper?
is it as easy as dragging the drum channels into the rack with the sampler in it?

In this case you could use the Audio Mixer module.
yep, for each channel setup a separate rack, then create another one rack with sampler, and drag the other racks into input section of this "sampler" rack
Yes, you can also create a device for each input, check to Device chapter in the pdf manual
