Near the end of the manual, in Appendix I, there's a list of the default shortcuts from Usine. All these are defined in the Global Remote and you can edit them and/or add MIDI learn on them. You can also add keyboard shortcuts on a lot of the interface modules.
The quick way of adding learn to a control is to right-click the object, select Key or Midi learn and then hit the relevant key or send the Midi message.
