It would be nice to choose the default audio Out by wkp. If I work with surround, each new rack output would be set on the good device output automatically.

You can actually save a Devices set too, just open devices window and select, on the left side you can save this set of devices. I am not 100% sure if they are saved by workspace...but its a try. At least you wont have to recreate all the time.

Of course, I can manage the different devices, but I would like to have the "good" device at the output each time I create a new rack. To avoid mistake when I'm working in surround and when I forget that the new track is just a stereo one 
Maybe you can use the duplicate rack feature in place of the new rack .?
