In the subpatch options, would it be possible to add (or replace) inlets and outlets of a subpatch by a single array inlet/outlet ?

could look like this :

since you can add array ins and outs as it is, it can get confusing if one is generated automatically, also since there's poly array value in sub-patch array inlet, you can just use that instead, if that's more efficient approach for you.
Although I can understand that at some point you might change your mind and decide that you need just single array in and(or) out, so you need to manually rewire the patch and possibly reapply polyphony and that can be inconvenient if you made some changes in instances of poly patch. So in that case simple checkbox that shows or hides array i/o consisting of already present data i/o, that would be convenient if it doesn't force reapply polyphony.

if you make only one ie output, tick 'once in poly' on it,
you will see only one purple pin, but it contains the array in fact if you clic on the wire.
